Let the Cooking Begin: Part Four

I'm not climbing the hill any more.. I own the hill.  This cooking stuff has taken completely over.  Let me tell you, I'm getting quite good at it, and for me to admit that... I must be doing something right.  I even received the thumbs up from my brother Mark, and he is a "Fried meat and Rice with Beans" {stated in his words} kind of man.

This is my brother ~ Mark

You know, almost like the saying "Meat and Potatoes", only different.    He is Spanish through and through {without ever speaking a word of it] eating type of person.  So with this meal, why not give it a Spanish twist ~ and that is just what I did.

Ree's Pulled Pork recipe; meet Black Beans and Rice.  The trio blasted with yummy seasonings and delighted tummy's.  The 8 pound pulled pork barely made it through the night.  Three starving men {because the cooking started it at 7am Saturday morning} waited all day long for three small simple words... "OK, It's Ready".   I find it so much easier to start making a big meal early on Saturday, due to Football and Baseball games, then everyone isn't trying to drum up a lunch meal, at the same time,  on their own.  It has become a weekend tradition in our house.  Besides, I have a Nac for making a meal and cleaning up as I go.  So my mixing bowls are cleaned as soon as they are emptied, the pots are cleaned as soon as their use is finished, and my counter tops remain spotless.   Plus, has anyone else noticed, that men can not seem to just add their plate/glass/silverware to an empty dishwasher?  Maybe the instructions for operation are in a foreign language, to just men.

Making the black beans was next on the list of things to do.  In a small crock pot {or one sized to your family} add the beans of your choice, and begin to cook as you normal would.  In a small frying pan, add Goya Olive Oil ~ just enough to saute the following ingredients on medium heat ...

1/2 cup chopped Red Peppers
1/2 cup chopped Yellow Peppers
1/2 cup chopped Yellow Onions
1/2 of one Goya Chorizos {sliced}
2 Tablespoons of Goya Sofrito.

Mmm.  Try not to let anyone pick the sliced Chorizos out of the frying pan.. they are heavenly.  When the Onions are slightly browned, add the mixture to the beans and cover the crock pot.  Let the beans and mixture cook until the beans are soft.  Yummy is all I can say.

The rice is easy to make.  I make 2 cups, and not your normal cups.  I take a coffee cup and fill it with white rice, twice.  Pour the rice in a medium sauce pan, add the same amount of water {2 coffee cups}, and Goya Olive Oil {just a splash so the rice doesn't stick}.  Cover and let the rice boil.  Once the rice comes to a boil, stir and turn to the lowest temp, and let it simmer for 30 minute; stirring occasionally.

When the Pull Pork is done, the beans are cooked, and the rice is hot.. Serve to your hungry family.  With my family, I learned that 8 pounds will never be enough, next Pulled Pork I pick up.. is going to be a 20 pound pork.  And it will be served at Thanksgiving {even if my brothers want Turkey} and Christmas.

Now, don't forget the snack after your meal.  There has to be a mouth watering dessert... I made Banana Nut Bread.. I know, not much of a dessert, but it went over very well that morning {while the pork smell filled the house}, the afternoon as a "taste of this" finger food, a bed time snack, and a Sunday morning coffee side.

Moist.  Soft.  Nutty.  Yummy.   Banana Nut Bread.. Think I am going to need to make another batch of this friendly tasty coffee side.

Let the Cooking Begin: Part Five...

Autumn ~ Doesn't that word just sing to you?

The leaf picture has nothing to do with the blog, but I can not get over the wonderful weather Florida is having so far.  I would love for the mornings to always be 58 degrees.  Love it!!

Another thing that I love, is the Meatloaf from Ree's cook book.  Not only was it easy to make and cook, always a plus when learning new things or just learning period, but it was a huge hit with the family.  Anyone with 3 men to feed, knows that if they like it.. it has to be good.  Both my mother and myself worked on the meatloaf together.  We both checked on it often, and could not be more pleased when it was finished.

Moist, topped with bacon, and just the right amount of sauce.  If you haven't picked up Ree's cookbook,  let me just tell you, you're missing out.  Oh yeah.. This was a simple Sunday meal, and I can not say it enough...  very very good.   I served with potato salad and fresh hot bread.   We will be having this meatloaf again.. real soon.

Don't you Love an Autumn sky?

Sisters are Love...

Mary Ann ~  My sister,  is moving.

While I am happy that she has this awesome job opportunity, I am sadden that her move will take her to Tennessee.  When I lived in Texas, she lived in Florida; we talked daily and text often, but had not seen each other in 2 1/2 years.

My sister Maryann {left}, and myself

I was beside myself when I first seen her. We talked face to face {with hot coffee in hand} until 4 O'clock in the morning.

New friends; and newer friends...

Is there such a thing as "newer", I mean; is it a legal word?  Guess I will have to look into that one.. my sweety will let me know.  I can count on him for everything and anything.  Love, such a beautiful thing.

As you know, I have been talking, babying, and loving my visits with the Red Shoulder Hawk that comes and visits me here.  He sits on the post out in my mothers front yard, that my sweety and I have turned into a bird feeder and squirrel feeder area, he brings his catch of the day and plops a squat on the top of the post while enjoying his meal.  Makes no mind to me, I love watching him.  His full chest, the feather filled legs he has, the yellow at the brim of his nose, the long claws he has.  Everything he does, I am in mouth dropping awe over him. The other day, I photographed him with his catch of the day, then he flew into the tree at my neighbors, let out a screech and out flew another darker Red Shoulder Hawk.  Now, listen to my brother Fred, and he'll tell you the darker one is Female because ~  "the males have to be really pretty in order to attract a female".

Fred is a fun loving man.  Just look at that face...

Maybe so, or maybe he just wants to know males have to be better looking in order to get a really great female.

He really has it in for this birthday cake...

OK, back to the subject... We can all see that my brother Fred is a nut.. and I love him to death...  When I saw the other Red Shoulder Hawk, I fell in love with her.  Now, I can get closer to the male Hawk, talk to the male Hawk longer, and get really good photos of him with no problem.  Until she got to know me, and come around with the male, she wouldn't let me get to close.  She didn't like having her photo taken, and she covered her food with her wings when she knew I was watching her.  Now though, it seems we are best of friends.

Just take a look at these..

The mate was calling as he was eating ...

Every bit of  movement is noticed; even the slightest sound has him at attention ...

A gorgeous Hawk.  I could watch him all day long ...

When he finished eating his kill for the morning {cause he visits the post often throughout the day} he flew to the trees in Normans yard...

As he was landing, she flew out to greet him.  Before I took this photo, he sat on the same branch as her, and although you can not see it in this photo; she is holding some of his kill in her claw.  Can you see both of them.. the next two photos; A} is cropped on her and B} is cropped on him.

She is darker breasted and the brim of her nose isn't as bright as his.

See him? On the left side of the tree trunk.  He has more gray then she does, and the brim of his nose is brighter yellow then hers.

She has never been down to the pole.  That is until he called for her and left the kill on the pole.  He flew into the tree in the front yard, and she ate until it was all but a tasty memory.

Her claws alone are a force in their own

not a second went by, without her inspecting the area ...

I was so happy when she stood fully and let me take this photo ..

But when she turned and looked right at me.. I died and went to heaven.

My Sweety ..

This is the love of my life.

I love taking care of him, cooking for him, watching him work, and spending time with him.

There is nothing like his passion for animals, any animal.

The knowledge he has for plant life ~ leaves me breathless.

He is always right there any, and every, time I need him.

Most of all... I love the way he loves me.

Nothing makes me happier then to hear him call my name.  I can't get enough of his praise when he eats my meals.  My sweeties laughter, lights up my soul.

He makes me want to stay home and do this for him all day long...

My Sweety ~  I love you bunches ...

Two Wild Dogs, a Helpless Pig, and a Sad Horse..

I live in a fairly quite area.  A few lots down is a guy who runs a fire works stand, so every now and then he sets off a fireworks display that can be seen and heard within the area.  When I first arrived at my mothers place,  maybe two weeks after I was here, there was the display of police choppers and police cars.  Seems a field of "herb" was growing in the area.  Problem solved, and we haven't seen any more police choppers flying around. But I am more then sure that didn't take care of the problem fully, the "growers" , most likely, just got smarter.

One of the biggest problems I see out here is, it has become a place to drop off unwanted animals.  Dogs and cats roam around with no place to go.  Finding refuge under the houses of unsuspected homeowners.  Getting meals often from trash cans.

Today, while working out in the yard with my sweety and my mother, we seen the cause and effect of such unwanted animals.  The term Wild Dogs brought on new meaning.

We were cleaning out the flower beds {seems to be a weed friendly place}, and setting the flower pots on bricks until they mature.  The benefit of this move, is we will enjoy the colorful blooms as they grow and mature.

Mom has always wanted a water fall that starts in the corner of this flower bed, and falls down slate rock and into the concrete area in front of the flower beds.  She talks about it, and you can not only see the water fall, but hear it as well.  Making this flower bed a home for the flowers, never crossed our minds.

I was pulling weeds when I hear the loudest squelching sound ever.  It was the sound of the neighbor, 2 lots down, pig.  Our own dogs were barking and racing to the fence.  I turn around to see what the pig was screaming about, when I saw it.  I yelled to my sweety "B A B Y,T H E   D O G S  !!!"  He turned and thought I was talking about our dogs.. so loudly  I say    "T H E I R,  T H O S E  D O G S  I N  T HE    D I T C H"  as I point toward the neighbors ditch.

Right there, in plain site, was four dogs attacking a small black pig.  The squelching screaming sound was horrible, the poor pig was defenseless and being bitten all over by the dogs.  In a flash my sweety began running toward the dogs in attempt to save the helpless pig.  following behind him was my mother {although she wasn't running} and myself.  Paul made it to the ditch {no one even thinking about the fact of there being 4 wild dogs and one human, not until afterwords}and scared the dogs off.  The poor little pig ran toward the property in which he lives, and hid next to the fence under cover.  The owners of the poor pig never came out to see about the animal.  My mother and myself thought the little pig would be dead by morning.

When we all seen TWO little black pigs, we jumped for joy.  The pig who had been attacked made it through the night.  In the pictures above, the female pig was the one attacked... she is the one in the top picture looking at the camera.  In the second picture, she is on the left.  If you look at her left hind leg, you can see the large mark where she was being eaten.  How she lived, is beyond me.  But I am so thankful to she her running around, limping.. but alive.

As for the dogs.. Well two of them were picked up by the Humane Society.  My biggest fear, if they could attack a pet pig, was the four dogs attacking a small child.  The dogs were obviously hungry,  they must have been dropped of in the area, because you can see they are healthy and wore a collar.  Unfortunately, they got the bad end of a deal from their bad owners.

Yesterday, my sweety and I ventured out to the local feed store.  Now, I know nothing about horses, but in the same lot as the two small pigs is a horse.  I have been watching this horse for a week, day in and day out the horse eats grass.  The area in which it grazes is more then thin on the grass side, which happens when the animal is left with only grass to eat.  Like I said before, the owners live on the property with the horse.. and two pigs.. and a area built onto the home {in the back out of site} full of baby and young adult squirrels.  I don't think I even want to know what is being done to the poor squirrels.

I had to do something.  Friday was the first day of Autumn, and with how skinny the horse looked to me.. I knew it would be a rough winter for the poor animal.  It may have been a small dead, but to the horse; it meant the world.

In attempts to get a meal, the horse is pulling down the fence to get to the grass ..

The saddest thing ever.. ribs are showing and the hip bones stick out...

With the slightest move, the poor horse flinches..  But the hay, he loved.

From what I understand, a starving animal has to be reintroduced to food slowly, and that is what we did with the hay.  I would hate to cause any more discomfort to the poor horse, but just from looking at him, you know he is hungry.  In Texas, this would get an owner hung... But I am not in Texas {where it is a crime to treat a horse like this}, when I talked to the humane society here in Florida, I was told "We don't do livestock.  Try the sheriff dept, if they don't want to handle it they will tell you to call us, but now you know we don't handle livestock ."  I could have yanked her through the phone ~  But, kept it together like a lady should...  A yanking would have felt great though.

The horse ate, and the pigs joined him in eating the hay, I am guessing they aren't getting the food they need either.    One step at a time, and I hope to blog good progress with the horse.. maybe he will be alittle fatter in the next photos.  Now, if only I could find a place here in Riverview/Brandon who wouldn't mind donating food to help this horse out...

Any ideas where I could check?
